Enable Sidekiq JSON logging by default

Omnibus already enabled Sidekiq JSON logging by default. This change
will ensure both Sidekiq clients and servers will log JSON
consistently.

Using "text" will restore the original format. Previously "default"
would mean "text", but that now means "json".
