Update OpenID and OAuth2 gems

This updates a number of gems:

- omniauth_openid_connect
- openid_connect
- rack-oauth2

These gems all need Faraday 2, which has been updated in
https://gitlab.com/gitlab-org/gitlab/-/merge_requests/159692.
